Elaborado con leche cruda de oveja. Con una curación de entre 8 y 10 meses. Corteza natural recubierta con aceite y o manteca de cerdo ibérico.

El corte es de color amarillento y sabor fuerte e intenso , ligeramente picante.

Se presenta en piezas de 1 kilo y de 3 kilos, enteros o partidos en mitades, cuartos y octavos, envasados al vacío.
