Elaborado con leche cruda de vaca en un 60%, leche cruda de cabra en un 20%, y leche cruda de oveja en un 20%. Con una curación superior a 8 meses. Corteza natural, recubierta de parafina alimentaria. Pasta firme un poco quebradiza.

El corte es de color amarillento y de sabor fuerte e intenso, con un ligero toque picante
